Do you find yourself consuming food on a daily basis?  You're not alone.  The staffers here at Camp Cool also eat every day, and we created the Cafeteria to share some of our favorites.  Everything you see here is simple, easy, and delicious.  If you know of something that meets this criteria, please send us your recipes, product recommendations, and/or samples.  If we end up printing your suggestion, we'll hook you up with a t-shirt.  Fresh.  It's what's for dinner. 

The Poorest Man's Tuna Salad

1 can tuna fish
Ranch dressing (about 3-4 tablespoons)
Saltine crackers

Mix tuna and ranch until you get the consistency you desire. (Betsy prefers hers to be more chunky than runny.) Spread on saltines and enjoy! (Unfortunately, we were fresh out of saltines, so we experimented with putting the tuna between some bread. Just as you'd suspect, it was very, very, very delicious.)

Crack Rock - it's easy, inexpensive, and good.

Go get these 4 things:

  • 1 package of yellow cake mix 
  • 1/2 cup butter, softened  [If you have to use fake butter, make sure it has more than 65% vegetable oil, and only use 7 tablespoons]
  • 1 egg
  • 1 jar (12. oz.) caramel topping

 

Do these things with those things:

  1. Preheat oven to 350.  In a large bowl, stir together dry cake mix, butter, and egg with a fork.  Press half of mixture in the bottom of ungreased 8x8 inch square pan.
  2. Bake 10 minutes.  Take it out of the oven.  Pour about 7/8 of the caramel topping over the crust.  Sprinkle the rest of the cake mixture on top.
  3.  Bake 20 to 25 minutes or until light golden brown; cool completely, about 1 hour.  Cut into roughly edible portions.  Store covered. 

Cracker Rocker - it's harder to make, pricier, and better.

Go get these 5 exact things:

 

Do these things with those things:

1.  Preheat oven to 350.  Put 1/2 cup of the pecan halves in a Ziploc bag and smash them up pretty good with a hammer, like so.  In a large bowl, stir together these newly smashed pecans, dry cake mix, butter, and egg with a fork.  Press half of mixture in the bottom of ungreased 8x8 inch square pan.

 

2.  Bake 10 minutes.  Take it out of the oven.  Pour about 7/8 of the caramel topping over the crust.  Sprinkle the remaining pecans on top of the caramel.  Sprinkle the rest of the cake mixture on top.

 

3.  Bake 20 to 25 minutes or until light golden brown; cool completely, about 1 hour.  Cut into roughly edible shapes.  If you just can't wait that long, cool for about 5 minutes, spoon some into a bowl and cover it with vanilla ice cream.  You'll like it, you'll love it, you'll want some more of it.

Go get these things:

  • 1 gallon Hawaiian Punch
  • 1 two liter bottle of Sundrop (or similarly low dollar carbonated citrus drink)
  • 1 fifth of Diesel (low dollar Everclear)
  • Lots of ice

 

Do these things with those things:

    1. Get a large canister of some sort and put in lots of ice.
    2. Pour in Hawaiian Punch
    3. Add Sundrop
    4. Add Diesel
    5. Put top back on canister and shake for 20 seconds.
    6. Pour into cups
    7. Slam them back and comment on how they taste like there's not even any alcohol in them
    8. Continue to add more and more Diesel with every batch until handcuffs don't allow mixing

All praise due to Delimex Rolled Quesadillas, only the mistakes were mine.  The foodstuff pictured to your right is the best frozen taquito-ish product on the market today, by far.  And believe me, we've tried them all.  The southwestern chicken variety is way better than the tex mex beef, but that's not to say that beef ones aren't delicious.  It's just that the chicken version may be THE perfect food.  We suggest that you try both oven-baking and microwaving, in order to determine whether you prefer the oven-fresh crispiness or microwavey chewiness.  Splitting a box between two people is customary, but it's not unheard of for a big guy like Model James to polish off a whole box in one sitting.  These aren't available at every grocery store, so you may have to shop around a bit.  If you're in the San Diego area, you can get em at most VONS.  And you'll be happy you did.

**Note: Make sure you get the box pictured above.  Delimex makes a lot of products, but only the Rolled Quesadillas are endorsed by Camp Cool.

Here's what you do with the stuff: 
  • Melt cream cheese in microwave - check and stir about every 30 secs...be careful not to burn.
  • Add marshmallow cream, stir well.
  • Now dip your strawberries (use a fork if you want), and you've found heaven on earth.  Heather likes em.  So does Holden
